Foodie Fridays: Spaghetti with Sausage, Peppers, and Onions

If you are looking for a recipe that is quick, easy, and tasty, then look no more, because Spaghetti with Sausage, Peppers, and Onions is the one!  This is one of the recipes I turn to when I need a meal in a hurry and do not have time to search for something new and different.  Any type of Italian sausage will work, including the turkey variety (use additional olive oil for this), and any color of bell pepper can be used.  I like to use a red onion for the additional color, but any onion will do.  Some good Italian bread to wipe your plate is all that you need to complete this meal!

Spaghetti with Sausage, Peppers, and Onions

8 oz. spaghetti, cooked and drained
1 lb. bulk Italian sausage (or split casings of sausage links and remove)
1 T. olive oil
1 large onion, sliced
3 bell peppers, sliced
3 cloves garlic, minced
1 can (28 oz.) diced tomatoes with basil, garlic, and oregano
salt and pepper to taste (optional)
1/2 C. grated Parmesan (optional)

While spaghetti is cooking, brown sausage in a large skillet until no longer pink.  Remove sausage and add olive oil.  Sauté onion, peppers, and garlic in oil 5-6 minutes until softened.  Stir in sausage and tomatoes and season to taste.  Cook, uncovered, about 15 minutes until slightly thickened.  Stir in spaghetti and heat through.  Serve topped with cheese, if desired.  Serves 4.
