Derby Pie was created about 50 years ago at the Melrose Inn of Prospect, Kentucky, by the Kern family. It consists of a chocolate and walnut filling flavored with Kentucky bourbon in a pastry crust, and has come to be associated with the Kentucky Derby. The original recipe is known to only a few people at Kern Kitchens. The name "Derby Pie" has been trademarked by the company and the right to use it is jealously guarded. However, there are a number of recipes available with the requisite main ingredients, and they are all good! Here is one of them:
Chocolate Walnut Bourbon Pie
1/2 cup flour
1 cup sugar
2 eggs, beaten
1/2 cup melted butter
2 T. Kentucky bourbon
1 cpu chopped walnuts
1 1/4 cups semisweet chocolate chips
1 tsp. vanilla
pinch of salt
1 ready-made pie crust
Combine flour and sugar. Stir in eggs and butter. Add next 5 ingredients. Pour into unbaked pie crust. Bake at 350 degrees for 40-45 minutes. Cool before slicing. Top with whipped cream, if desired. Serves 8.
