Holiday Hits: Flourless Peanut Butter Cookies


I love peanut butter, so I couldn't be happier about the fact that today is National Peanut Butter Lovers Day.  In honor of the day, I thought I would publish the recipe for Flourless Peanut Butter Cookies -- so very easy, and so very good.  Rejoice, fellow PB lovers, and enjoy these mounds of perfection!  Just don't overdo it, as they are also very rich!

Flourless Peanut Butter Cookies

1 C. peanut butter
1 C. sugar
1 egg

Combine all ingredients until blended.  Form into 12 balls, roll in sugar if desired, and place onto a parchment-lined cookie sheet.  Use a fork to make a criss-cross pattern on top.  Bake at 350 degrees for 8 minutes.  Cool.  Makes 12.

Note:  Some recipes call for the addition of 1 tsp. baking soda.  To make Peanut Butter Blossoms, omit the criss-cross pattern, and press a Hershey's Kiss into the middle of each cookie as soon as they come out of the oven.
