If you have any beer left over from St. Patrick's Day celebrations, use a can or bottle to make this tasty and simple bread (I would not advise any of the green stuff, however!). Beer Bread is so easy to make that I hesitate to even call it a recipe. Only four ingredients are needed, and minimal effort is required. If you do not have self-rising flour, do not panic! Simply add 1 1/2 tsp. baking powder and 1/2 tsp. salt for each cup of all-purpose flour as a substitute. This bread is wonderful warm and buttered, served with a bowl of soup or on its own.
Beer Bread
3 C. self-rising flour
3 T. sugar
1 can or bottle (12 oz.) beer
1/3 C. melted butter
Combine flour and sugar. Gradually stir in beer. Spoon into two greased loaf pans. Drizzle butter over each loaf. Bake at 375 degrees for 45-50 minutes until golden brown. Cool on racks.
