Foodie Fridays: Veggie Pesto Naan Bread Pizza


I have become obsessed with my easy recipe for Veggie Pesto Naan Bread Pizza, and have been making one or two every week lately!  Naan bread is the perfect size for a small, two-serving pizza, and it comes in several flavor options (roasted garlic-flavored naan is especially good).  Use any vegetables you like - I have been using a store-bought blend from Publix that contains green beans, sun-dried tomatoes, slivered almonds, and whole garlic cloves, but I think any roasted vegetable combination would also be fantastic on this pizza.  The two servings are quite generous in size, so cut the pizza into smaller pieces if you like.  There is no need to order from the local pizza place when you can easily make this simple, quick, and delicious pizza at home!

Veggie Pesto Naan Bread Pizza

1 naan bread (I used Stonefire Whole Grain Naan)
1/4-1/3 C. pesto
1 C. chopped cooked vegetables
6 slices fresh mozzarella

Place the naan bread on a foil-covered baking pan.  Spread with the pesto.  Top with the vegetables.  Arrange the mozzarella slices on top so that when the pizza is sliced in half each half will have three slices of cheese.

Bake at 425 degrees for 5-7 minutes, until the cheese is melted (I like to bake it in our toaster oven).  Remove from the oven and cool slightly before slicing in half and serving.  Serves 2.
