Foodie Fridays: Easy Peas and Cheese Salad


It has been so hot here in Georgia lately that I have not been in the mood to cook.  A simple recipe I found recently for Easy Pea and Cheese Salad was the perfect solution for a light meal or hearty side dish that only requires mixing a few ingredients together.  There are many variations on this peas-and-cheese combination, most calling for cubes of cheese, but I really prefer shredded cheese, and the prepackaged kind is fine in this recipe.

Use your imagination to vary the ingredients any way you like - any sort of shredded cheese, scallions or shallots instead of red onion, the addition of other vegetables such as diced celery or bell pepper, and any seasonings you like.  I might even try stirring in some toasted walnuts next time.  I think I need to find more easy salad recipes if our summer is going to be as hot as the month of May has been here!

Easy Peas and Cheese Salad

1 bag (12 oz.) frozen peas, thawed
2 C. (8 oz.) shredded cheese (I used a pizza blend)
1 small red onion, diced
1 hard-boiled egg, diced (optional)
3 T. tatziki*
3 T. mayonnaise
salt and pepper to taste

Mix together the first four ingredient in a large bowl.  Add the tatziki and mayonnaise and season with salt and pepper.  Stir gently to thoroughly combine.  Taste and adjust seasonings as needed.  Refrigerate until ready to serve.  Serves 4-6.

*It is easy to find pre-made tatziki in the grocery store refrigerated deli section these days, but if you prefer you can use 3 T. plain Greek yogurt instead.
