Foodie Fridays: Easy Peas and Cheese Salad
It has been so hot here in Georgia lately that I have not been in the mood to cook. A simple recipe I found recently for Easy Pea and Cheese Salad was the perfect solution for a light meal or hearty side dish that only requires mixing a few ingredients together. There are many variations on this peas-and-cheese combination, most calling for cubes of cheese, but I really prefer shredded cheese, and the prepackaged kind is fine in this recipe.
Use your imagination to vary the ingredients any way you like - any sort of shredded cheese, scallions or shallots instead of red onion, the addition of other vegetables such as diced celery or bell pepper, and any seasonings you like. I might even try stirring in some toasted walnuts next time. I think I need to find more easy salad recipes if our summer is going to be as hot as the month of May has been here!
Easy Peas and Cheese Salad
1 bag (12 oz.) frozen peas, thawed
2 C. (8 oz.) shredded cheese (I used a pizza blend)
1 small red onion, diced
1 hard-boiled egg, diced (optional)
3 T. tatziki*
3 T. mayonnaise
salt and pepper to taste
Mix together the first four ingredient in a large bowl. Add the tatziki and mayonnaise and season with salt and pepper. Stir gently to thoroughly combine. Taste and adjust seasonings as needed. Refrigerate until ready to serve. Serves 4-6.
*It is easy to find pre-made tatziki in the grocery store refrigerated deli section these days, but if you prefer you can use 3 T. plain Greek yogurt instead.

This 'n That Thursdays: Two Excellent Movies

While flying to and from New Mexico recently, I took the opportunity to watch two movies that I had never seen before. Although most of the other plane passengers seemed to be watching "Aquaman" (2018), which was one of the many choices available, I was in the mood for a different type of movie (not that there is anything wrong with a well-made superhero movie, and I am sure I will watch this one eventually!). One of my criteria for watching an in-flight movie is that it must be available with English subtitles, because I do not like to use earphones and would rather read the dialogue while movie-watching on a plane (I know, what can I say except that I am just weird!). I found two that satisfied this requirement and also sounded worth watching, and both turned out to be great selections.

The first movie I watched on the way to Albuquerque was "Arctic" (2018/2019) , starring Mads Mikkelsen, an actor I had never heard of before but who I will be on the lookout for from now on. The plot was focused on the efforts of a man stranded in the Arctic to survive, and then to find help after a helicopter rescue mission goes horribly wrong and he becomes responsible for a badly injured and immobilized young woman. The best part of this movie for me was that there was very little dialogue and a minimum of subtitles. Since the main character is at first alone and then only accompanied by a mostly unconscious woman, there is no need for words. The acting is all visual, and Mikkelsen does an excellent job showing the physical and emotional demands of his predicament just by the use of facial expressions and body language. I thought this movie was even better than the Robert Redford lone survivor movie called "All Is Lost" (2013) - Redford's movie was not bad, but I liked "Arctic" more!

The second movie I watched on the return flight was "At Eternity's Gate" (2018) starring Willem Dafoe (coincidentally, Mads Mikkelsen was a supporting actor!). This movie recounts the life of Vincent van Gogh starting with the period he spent in Arles, up until the moment of his death (with an interesting, if unproven, alternative explanation for van Gogh's demise). Dafoe does a superb job portraying the troubled artist - you can feel his joyful ups and troubled downs in a life predominantly ruled by his emotions, as well as a mind that even the artist himself finds unreliable. Oscar Isaac as fellow artist Paul Gauguin is excellent as well, leaving you uncertain as to whether the man was a good influence or a bad one for van Gogh, and indeed he could have been both. Vincent's brother Theo van Gogh as portrayed by Rupert Friend intrigued me enough to want to know more about Theo, who was apparently devoted to his older brother Vincent and kept every letter he received from him, although unfortunately Vincent did not do the same (it would have been so enlightening to read Theo's correspondence had it survived). I did not get to see the end of this movie on the flight, so I will be looking to do so in the near future. My husband did watch the entire movie on his travels last week, and enjoyed it, although of course as we all know it does not have a happy ending.

If you are being forced to spend a lot of time indoors to beat the heat, as we are here in Georgia, or avoiding other adverse weather conditions, you might want to watch one or both of these movies, which are available for rental on Amazon (here and here) or Netflix (here and here) - I could not find either one free online yet, but in my opinion it is worth paying to watch either one!

Wish List Wednesdays: Black and White Geometric Patterns from Pier 1
I just love the new ad from Pier 1 shown above, with the feisty beagle who redecorates his owners' outdoor space! This ad got me to take at look a Pier 1's outdoor collection, and I am obsessed with their selection of black and white geometric pieces. Here are the ones I would choose for my patio (if we were not in the process of downsizing for our upcoming move, that is!):
The Mombasa Black & Ivory Lounge Chair (on sale for $149.99) would be perfect for enjoying morning sunrises or evening sunsets on our back deck in Georgia or the back patio at our New Mexico home.

The Watercolor Ikat Black Pillow (on sale for $4.99) continues the black and white geometric scheme - a few of these pillows scattered about would add a comfy touch to any seating areas.

On the Homefront: Home Again!

I am back from New Mexico, just in time for last night's "blue flower moon". My little digital camera does not even begin to do it justice, but the moon was quite lovely when I was out walking my dogs before dawn this morning. I hope you got a chance to see it where you live!
The weather difference between New Mexico and Georgia is quite pronounced at this time of the year. Temperatures were mild during the day and rather cool at night in the Southwest, while in the Southeast it feels like summer, with daytime temperatures near 90 degrees and of course the ever-present high humidity! While it is good to be back with my animals, and I even got to see my husband briefly before he left on the first of many trips he will be taking this spring/summer, I do miss the New Mexico weather!
I did not take nearly as many photographs as I would have liked while at our new house - I had so much to do and so little time to do it all on this trip! I did manage to get some lovely wildflower images, however, because the state received a record amount of rainfall this spring and plants that folks in our new neighborhood had never seen before were blossoming profusely. I will post my photos later in the week, but I will be extremely busy for the next few months as we get ready for our big move so my blogging will be rather erratic for a while. Have a great Sunday, everyone - it is good to be back in communication after a week without internet access!

I am heading out to New Mexico tomorrow, though thankfully not by a mule team-pulled stagecoach (which might be charming but would take forever!). I will begin getting our new house ready for our eventual move, and since we do not yet have internet access I will not be able to post to my blog for the week that I am gone. I will try to take quite a few pictures, however, so you will probably be treated to more of my rather mediocre photography attempts than you care to peruse as soon as I return. I hope you are having beautiful weather where you live right now, and I hope that the weather in New Mexico permits lots of outdoor cleanup while I am there. See you in a week!

Foodie Fridays: Biscoff Cookie Butter Blondies
I really enjoyed the Easy Almond Flour Nutella Brownies recipe I made a few weeks ago, so I decided to try substituting Biscoff Cookie Butter for the Nutella spread to come up with my version of blondies. The result is just as moist and tender as the Nutella brownie version. The flavor is not as intense, so next time I might add chocolate chips, nuts, or perhaps a good dose of cinnamon (or maybe all three!). Like the brownies, these blondies require very few ingredients and are quite simple to prepare. I also like the fact that the recipe only makes eight servings, and that the squares freeze well, since there are only two of us in our household. While I no longer prepare desserts very often, the next time I do this recipe will certainly be on my list to make again.
Biscoff Cookie Butter Blondies
1 jar (14 oz.) Biscoff Cookie Butter (or other cookie butter)
2 eggs
1/2 C. all purpose or almond flour
pinch of salt (up to 1/4 tsp.)
Remove the lid and foil cover from the cookie butter jar. Microwave the jar, loosely covered, for 15 seconds on HIGH to soften. Place in a large bowl and beat in the eggs until smooth and fluffy. Add the all purpose or almond flour, plus the salt if using. Stir until well combined (mixture will be thick but pourable).
Line a 9x5-inch loaf pan with two pieces of parchment paper or foil so that the ends overhang the two long sides (grease the foil if using). Pour in the blondie mixture and spread evenly in the pan. Tap the bottom of the pan on the counter a few times to remove any air bubbles in the batter.
Bake at 350 degrees for about 30-35 minutes, until the center is firm to the touch (a toothpick inserted in the center will come out moist). Remove from the oven, place on a wire rack, and cool to room temperature in the pan. Remove the blondies from the pan using the parchment paper or foil overhangs. Slice into 8 equal portions with a sharp knife. Serves 8.
Notes: If you use almond flour it will make these blondies very rich, so eat them sparingly. Almond flour baked goods also spoil quickly if kept at room temperature, so be sure to refrigerate any leftovers (they do freeze well). I have not tried using all purpose flour for this recipe, so I do not know how well they will turn out, but they should be all right kept at room temperature for a few days.

Wish List Wednesdays: Our Dog Ruby's Favorite Toy
Madison, our younger dog, loves all toys. Rubber chew toys, tennis balls, rope toys, stuffed toys (especially those that squeak) - Maddie wants to own them all! On the other hand, our older dog Ruby is rather quirky when it comes to toys. She is only interested in stuffed ones, but she will not play with them until after they have been broken in by another dog. For some reason, she prefers used toys, and the more tattered the better as far as she is concerned.
There is, however, one exception to Ruby's rule. See that Outward Hound Hide A Squirrel Plush Dog Toy ($7.99) shown above? Ruby loves it, but in particular she loves the stump! The stump does not squeak, and is rather cumbersome, but our Ruby will choose it every time. She likes to carry it around and shake it, and then lie down and chew on it for a while. She will even forego waiting until Madison has broken it in, and will happily grab a brand new one. I don't even pretend to understand why she does this, but I do know that we are on our last stump at the moment, so an Amazon order as soon as possible is on Ruby's wish list for sure - we need a backup stump!

Foodie Fridays: Creamy Avocado Egg Salad Sandwich
I happen to love egg salad, and I adore guacamole, so it simply made sense to combine the two flavors into one easy and delicious sandwich filling. Below is my version of a recipe for Creamy Avocado Egg Salad from the Gimme Delicious website. I added chives as the herb because they are growing (and flowering) profusely in my garden right now, but feel free to add any favorite fresh or dried herbs or seasonings to this basic mixture. I might include my favorite smoked paprika next time, and/or my other favorite, everything bagel seasoning. A bit of dry ranch dressing mix might also be tasty. Use your imagination to create your own filling flavor preference!
Creamy Avocado Egg Salad Sandwich
4 hard-boiled eggs, diced
2 small avocados, halved, pitted, and flesh scooped out
2 T. mayonnaise (plus more for spreading on bread if desired)
juice of one small Meyer lemon (about 1 T.)
1/4 tsp. salt (or to taste)
2 T. minced herbs (I used chives)
8 bread slices
salad greens
Combine the eggs, avocados, 2 T. mayonnaise, lemon juice, salt, and minced herbs in a medium-sized bowl and stir gently until well blended. Spread each bread slice lightly with mayonnaise, if desired. Place some salad greens atop four of the bread slices. Divide the egg salad mixture evenly among the four prepared bread slices. Top each sandwich with the remaining bread slices and serve. Serves 4.
Notes: Once again I used my favorite Arnold's 100% Whole Wheat Sandwich Thins, but use any bread you like. Lime juice can be substituted for the lemon juice. Fresh herbs such as cilantro, parsley, dill, or basil can be used instead of or in addition to the chives.

Originally commissioned by the Idaho Potato Commission to promote their 75th anniversary Famous Idaho Potato Tour, the giant 6-ton potato was recently replaced with a newer version. After some consideration as to what to do with the original, the Idaho Potato Commission decided to let Kristie Wolfe, a tiny house builder and two-year spokesperson for the Big Idaho Potato Tour, recycle it as an Airbnb rental on her 400-acre farm about 25 miles east of Boise, Idaho. So what do you think? Does a stay in a giant potato sound "a-peeling" to you? If so, the cost is $200 per night for two people (no "small fries" allowed), plus an extra $47 in taxes and fees, which is not exactly "small potatoes". However, for the right person, it might be worth cashing in some "chips" for a s-"mash"-ing good time!

The shipping cost is astonishingly high, but fortunately it does not double if you purchase both items (although another $4 will be added instead). While I do not have human children, I am a proud doggie mom, so maybe I should request these items from my husband as a Mother's Day gift?
