Weekend Wardrobe: Shades of Yellow-Orange and Purple Late Spring Basic 4x4 Wardrobe

Enough with the pastels and pale hues for spring - I am ready for some bold color!  The wardrobe I created for today will transition from spring to early summer, so I feel that shades of yellow-orange and purple like those found in the image above will work just fine (ignore the fact that the photo features fall leaves!).  Luckily the ivory-colored sky adds a color that will tone down the more vibrant  hues.

Let's start with the first set of four, which includes pants and three tops:

The combination of purple with yellow-orange is not for everyone, but for those exuberant souls who love bold color and like to stand out in a crowd this wardrobe provides so many fun and exciting outfit possibilities.  Next week I will add accessories that will bring even more eye-catching interest to a wardrobe that is definitely not for the shrinking violet!

Foodie Fridays: Easy Almond Flour Nutella Brownies


There are many slight variations of the recipe for Nutella Brownies, including a couple which substitute almond flour for regular all-purpose flour.  Since I need to reduce my carbohydrate intake whenever possible, I decided to use up a jar of Nutella spread I had in my pantry with this lower-carb version.  I am happy to report that these brownies are every bit as tasty as those made with wheat flour.  I was even able to keep myself from over-baking them, which is what usually happens to brownies that I make, so they turned out moist and tender just the way brownies are supposed to be!  If you do not have almond flour, feel free to use an equal amount of regular flour and I am sure they will be just as good.  You can leave out the cocoa powder and salt, but the cocoa powder gives these bars and extra punch of chocolatey bitterness that I rather like, and salt will complement their sweetness.  This recipe is so easy and so delicious that I see no reason to ever make a traditional brownie recipe again!

Easy Almond Flour Nutella Brownies

1 jar (13 oz.) Nutella spread
2 eggs
1/2 C. almond flour
2 T. cocoa powder (optional)
pinch of salt, up to 1/4 tsp. (optional)

Remove the lid and foil cover from the Nutella spread jar.  Microwave the jar, loosely covered, for 15 seconds on HIGH to soften.  Stir the Nutella spread and microwave for 15 more seconds on HIGH if needed.  Place in a large bowl and beat in the eggs until smooth and fluffy.  Add the almond flour, plus the cocoa powder and salt if using.  Stir until well combined (mixture will be thick but pourable and very sticky).

Grease a 9x5-inch loaf pan and line with two pieces of parchment paper or foil so that the ends overhang the two long sides (grease the foil if using).  Pour in the brownie mixture and spread evenly in the pan.  Tap the bottom of the pan on the counter a few times to remove any air bubbles in the batter.

Bake at 325 degrees for about 50 minutes, until the center is firm to the touch (a toothpick inserted in the center will have moist crumbs attached).  Remove from the oven, place on a wire rack, and cool to room temperature in the pan.  Remove the brownies from the pan using the parchment paper or foil overhangs.  Slice into 8 equal portions with a sharp knife (lightly grease the knife to keep the bars from sticking).  Serves 8.

Notes: Recipes for Nutella brownies call for an oven temperature ranging from 325-375 degrees.  Since I tend to over-bake brownies, I went with the lowest suggested oven setting, but they did take quite a long time to bake.  If you trust yourself to keep an eye on them, you can try baking these brownies at 350 or 375 degrees for a shorter period of time.

The almond flour makes these brownies very rich, so eat them sparingly.  Almond flour baked goods also spoil quickly if kept at room temperature, so be sure to refrigerate any leftovers (they do freeze well).

This 'n That Thursdays: Modern Minimalist Soutwestern Interior Design Ideas

this room.

Now that we have our New Mexico house, I am starting to think about interior design ideas.  Since the house is a more contemporary take on traditional southwestern style, I am leaning toward a more modern and minimalist look (whether my husband and I, who both have a tendency to collect too much stuff, can stick with a minimalist theme remains to be seen, but we can at least aspire to the look!).  I was inspired by the image below that I stumbled upon while browsing the internet:

We will be purchasing very little new furniture (hopefully none at all), but will probably buy a couple of new rugs at some point.  In future posts I may play around with some style board ideas incorporating furniture pieces similar to the ones we own - I already have a few ideas in mind.  And if all goes according to plan, we will have some of our furniture moved in July, so I will be able to physically arrange items to my heart's content, as long as I can move them by myself, since my husband will be spending the summer working in Brazil.  I hope he likes the final results, because his absence means that I can do as I please!  😄😊😏😜

Weekend Wardrobe: Coral, Cream, and Shades of Tan Wardrobe for a Female Friends' Weekend Getaway

I have never done a friends' weekend getaway, but I really would like to one of these days.  As the weather warms up I thought it would be fun to put together a wardrobe for just such a weekend, perhaps to a coastal location like Charlotte or Savannah, since most of my friends and relatives live close to the east coast and these two towns are a good halfway point for almost everyone.  I picked the color coral because Living Coral is the Pantone 2019 Color of the Year, and because it is a hue that flatters most complexions (at least according to advice I was told decades ago that turquoise and coral are universally flattering colors).  I included neutrals in cream and shades of tan, added a couple of pieces of jewelry featuring sea turtles in honor of the coastal location, and came up with a collection that is casual, comfortable, and fun, which is just the type of clothing and apparel that I love!

Foodie Fridays: Smashed Chickpea and Avocado Salad Sandwich


If you are looking for a quick, easy, and healthy sandwich, I can highly recommend the Smashed Chickpea & Avocado Salad Sandwich recipe from the Two Peas & Their Pod website.  The sandwich filling comes together very quickly, and the taste is fantastic!  You can use any salad greens you prefer in this sandwich (I happen to like arugula) as well as any other sandwich additions such as tomatoes or alfalfa sprouts.  My favorite sandwich bread at the moment is Arnold's 100% Whole Wheat Sandwich Thins because I prefer a higher filling-to-bread ratio, but use whatever bread you enjoy.  I did spread just a dab of mayonnaise on the bottom bread slice to help hold the arugula in place, but this ingredient is entirely optional.

This is one of the best sandwich fillings I have had in a long time, and I know I will be making this recipe often - I have already made two batches in less than two weeks!

Smashed Chickpea and Avocado Salad Sandwich

1 can (15 oz.) chickpeas, rinsed and drained
2 small avocados
1/4 C. minced fresh cilantro*
2-4 T. thinly sliced green onion
1 Meyer lemon, zested and juiced
salt and pepper to taste
8 slices whole wheat bread
mayonnaise (optional)
arugula (or other salad greens)

Place the chickpeas in a large bowl.  Scoop out the avocados and add to the bowl.  Smash the chickpeas and avocados together with a potato masher or fork  (I started with the potato masher and finished with a fork to get all of the chickpeas smashed).  Stir in the cilantro, green onion, and lemon zest and juice.  Season to taste with salt and pepper.

If desired, spread a small amount of mayonnaise on 4 slices of bread.  Top each with a handful of arugula or other salad greens.  Divide the chickpea mixture evenly among the 4 arugula-topped bread slices.  Cover each with the remaining 4 slices of bread and serve.  Serves 4.

*I used 2 T. Gourmet Garden Cilantro Stir-In Paste instead of fresh cilantro.

Bungalow 1 was a favorite of Marilyn Monroe and has been redone in her honor, so if you are a fan of hers then this is the choice for you!  According to the website description, "Warmth and femininity abound in this newly-restored bungalow... If you long for a taste of the billionaire lifestyle, then why not spend a night in Bungalow 3, refurbished to reflect the preferences of reclusive tycoon Howard Hughes?  According to the website, this bungalow is decorated in "... stormy bold colours, dark stone and rich exotic woods... ", giving it a distinctly masculine feel.  Howard Hughes was a lifelong aviation enthusiast and record-setting pilot, so it is only fitting that guests in this bungalow are supplied with an Aviation Cocktail Kit.  Serve those cocktails with mini roast beef sandwiches, another Hughes favorite that he often requested be provided during his stays (ever the recluse, he had the sandwiches placed under a tree outside his bungalow rather than brought to the door, although I am not sure if this unusual delivery option is still available!).

Spring is here, and I am really craving color in my life!  The vivid Vaway Reversible Anorak ($300) from Anthropologie is pushing all the right buttons for me.  Red is my favorite color, so the vibrant Red Motif color which reverses from a lively print to a bright red would suit me perfectly as a spring jacket.  The price is rather high, but as usual if money were no object this anorak would be in my coat closet right now!

Foodie Fridays: Roasted Broccoli and White Beans


Life just keeps getting more and more hectic around here!  The water mitigation company came out to set up their heater, dehumidifiers, and quite a few fans in an attempt to dry out our kitchen floor after a water leak from our fridge seeped below the tiles and into the subfloor.  We were warned that this step would probably not do the job, but had to be done to satisfy the insurance company.  If you have never experienced this procedure, let me just say that it is extremely noisy!  The equipment had to run for 48 hours, and by the time the company returned to check on the progress we were so ready for the noise to stop.

Unfortunately, the subfloor was not dry, so tiles had to be removed and the fans and dehumidifiers turned on again.  Fortunately, we got to say goodbye to the heater - our weather is finally heating up and that heater was making the house uncomfortably warm.  The subfloor is now dry and the insurance adjustor has been out, so we get to proceed to the next step - hiring a contractor to replace our tile floor.  I hope my husband, our two dogs, and I can survive this whole long process and still maintain our sanity!

Tile work is a time-consuming and dusty job, so our kitchen will be off limits until the work is done.  Before the work starts, I need to cook up as much food in the fridge as possible.  To use up a bag of broccoli florets, I decided to make a recipe for Roasted Broccoli and White Beans that I found online.  This dish is very quick and easy to make and is a very satisfying lunch or light dinner, especially if served with an egg (fish or chicken would also be a nice protein alternative).  Since I am a hot pepper wimp, I left out the red pepper flakes in the original recipe, but if you like spicy heat add as much of this ingredient as you like.

This is a very basic recipe that could easily be personalized with additions and/or changes to ingredients.  Add more vegetables (onions and bell peppers would be nice), change up the seasonings (next time I may add my favorite smoked paprika), or use a different type of beans or cheese.  Just don't leave out the lemon slices!  I had never tried roasting lemon slices before as the thought of eating entire pieces of lemon did not seem appetizing to me.  Imagine my surprise when I discovered that roasted lemon slices are actually delicious, soft in texture and more mellow in flavor than I would have expected thanks to the caramelization that occurs during roasting.  I will be adding lemon slices to more roasted recipes in the future!

Roasted Broccoli and White Beans

4-5 C. broccoli florets
1 T. olive oil
2 T. garlic-infused oil
salt and pepper to taste
red pepper flakes to taste (optional)
1 can (15 oz.) white beans, rinsed and drained
2 lemons
1/2 C. grated Parmesan

Put the broccoli into a large baking pan or sheet.  Pour in the olive and garlic oils and toss to coat.  Season to taste with salt, pepper, and red pepper flakes if using.  Add the beans and toss very gently to coat with oil without smashing them.  Slice one lemon, removing all seeds, and nestle the slices throughout the broccoli mixture.

Roast at 400 degrees for 15-20 minutes, tossing occasionally.  When the beans and broccoli begin to char, top with the Parmesan, turn the oven up to BROIL, and cook for 2 minutes until the cheese melts and starts to bubble.

Remove from the oven.  Grate the lemon zest from the remaining lemon over the mixture, then cut the lemon in half and squeeze the lemon juice over.  Serve with more grated Parmesan, plus a poached or fried egg if desired.  Serves 2-3.

Notes: I used a 12-ounce bag of microwaveable broccoli florets because I was too lazy to cut up a head of broccoli.  I started this recipe ahead of time by just roasting the broccoli mixture and removing from the oven before adding the Parmesan cheese.  When ready to serve, turn the oven on to BROIL, return the broccoli mixture to a roasting pan, top with the cheese, and continue with the rest of the recipe.  Or you can do as I did and put a single serving into a microwaveable bowl, top it with a few tablespoons of cheese, and microwave on HIGH for two minutes.

This dog sleep infographic is pretty self-explanatory.  The main point to take away from this summary is that dogs require more total sleeping time than humans because they spend a relatively smaller portion of their sleep time in restorative REM sleep than we do.  The old adage about letting sleeping dogs lie really does have a basis in fact, so let Fido rest as much as he/she likes for better health!

Wish List Wednesdays: Animal-Themed Coolers from Pottery Barn


Because I am very fond of turtles, if I were ever in need of a drinks cooler I would certainly consider the Oversized Turtle Cooler ($149) from Pottery Barn.  Made of cast aluminum with an antique finish, this whimsical cooler would be quite the conversation piece at any gathering.  The price is rather steep, but if money were no object then this party animal would be mine!  If you have a preference for marine mammals, there is a lovely Whale Cooler ($129), also aluminum but with a brass lacquered finish:

Current Events: Just Don't Look - It's Time to Ignore Lard Lad and Make Him Go Away

Do you remember the The Simpsons Treehouse of Horror VI segment called "Attack of the 50 Foot Eyesores", where advertising icons came to life, caused mass chaos and destruction, and were only defeated when they were ignored by all Springfield residents?  Even Lard Lad succumbed after Homer was scolded by his family to stop paying attention to the giant doughnut boy's insincere promises.  If you do not remember or never saw this segment, you can watch it below:


I have come to the conclusion that our president thrives in the same way that Lard Lad and his cohorts did.  The more attention Trump can garner, good or bad, the more he seems to feel that his existence as president is justified.  Whenever attention is diverted away from the POTUS, he will resort to any measure, no matter how ridiculous, to bring the focus back to himself.  Unfortunately, the more oddly he behaves, the more likely we are to look in his direction again, which simply reinforces Trump's tendency to do anything to steal the limelight.

So what is the solution?  I believe that Lisa Simpson and Paul Anka got it right with their "Just Don't Look" jingle!  The only way to diminish Trump's influence is to downplay the man's increasingly outrageous actions as mere clownish showmanship, and to instead concentrate on the actions and ideas of people who truly deserve our attention.  With a presidential election coming up in 2020, it is time to focus on Trump's successor.  Our current president will no longer be getting any attention from me.   If the man is out of sight then hopefully he will soon be out of mind (or will go out of his mind, perhaps, although some will argue that he already has).  The more people are willing to ignore Trump's follies the more likely this solution will work, so I hope others will follow suit.

However, I could not resist one last comparison:

This 'n That Thursdays: Five Fantastic Tips for Avid Readers


Serious readers will appreciate the tips shown above.  Go to the source of these tips here for a more thorough discussion of each one.  For me, Tip #1 is especially germane.  So many times I start a book and decide I do not care for it, but plow on regardless because I feel that I should.  Now why do I believe that I am obligated to do so when obviously there is no law requiring anyone to finish a book?  It takes me significantly longer to get through a book that is not interesting to me, and I could be using that time to read many other books that I do find compelling.

On the other hand, Tip #3 does not apply in my life because I still have an old flip phone, which has no airplane mode!  And because we are in the process of downsizing before our big move, Tip #5 is a good idea as we thin out our book collection and either sell or give away books that we no longer use.  I do try to carry a book with me when I know I will be spending time waiting around (travel, repair or medical appointments, etc.).  We could visit our local library much more often, but are trying to avoid buying more books until after we move so only visit the bookstore that buys used books from us.

Wish List Wednesdays: A New Dr. Seuss Book!


Are you a fan of Dr. Seuss (aka Theodor Seuss Geisel), that iconic creator of whimsical and immensely popular children's books?  Then you will be delighted to know that a new book from an original manuscript by the author, found posthumously, is about to become available!  The book, entitled Dr. Seuss's Horse Museum, tells the story of a friendly horse who takes a group of children on a tour of an art museum.  The unfinished manuscript was completed by illustrator Andrew Joyner, and includes photographic images of horse-themed artwork by famous artists in addition to the illustrations.

The book will not be available until September 2019, but you can pre-order a copy on Amazon here.  Incidentally, at the same time the manuscript for this book was found, a unpublished complete manuscript was also discovered, which led to the publication of the best-selling Dr. Seuss book What Pet Should I Get? in 2015.  If you are like me then I am sure you will feel the need to own this book as well, which can be ordered on Amazon here (or from other sources such as Target).  Happy reading, fellow Dr. Seuss fans!
