On the Homefront: Merry Christmas!


I brought very few decorations with me when I came here to New Mexico during the first phase of our move, but one of the few Christmas items that made the trip was the tabletop tree in the photo above.  My husband found some colorful garlands of donkey-shaped paper cutouts strung together with six feet of thread and bought three packs, so we decorated our tree with them.  The effect is simple but festive, which is just the sort of look I like.  This may be our only holiday decoration, but it makes us happy on this dreary and rainy day we are having, so who needs more elaborate décor?  I hope you have a fun-filled day any way you prefer!

On the Homefront: A New Look for My Blog

As I mentioned in an earlier post, I have redesigned my blog to reflect my recent move to New Mexico.  I have changed the name of my blog as well, but the blog link will remain the same.  And as an early Christmas present, I have created the above image in anticipation of the upcoming election season in 2020!  Feel free to use it, modify it, even criticize it if you like - I had fun creating it and that is the only important criterion for me!  Now I have to get some last minute Christmas shopping done (I hope the rest of you did not leave things to the last minute like I did).  Happy holidays!

On the Homefront: Another Beautiful New Mexico Sunrise


I could not resist posting an image of yet another beautiful New Mexico sunrise - I am obsessed!  Today I await the arrival of the DirecTV technician in the hopes that I can get satellite TV installed before my husband gets here on Sunday (he cannot live without his daily fix of news shows!).  While I wait for the technician, I will start baking the fruitcakes that I make every year for my siblings, as they have already told me that moving is no excuse for not baking their favorite holiday treat!

I finally had the plaster repaired on the inside wall of one of the guest bedrooms that had a roof leak over the summer.  Now I am in the process of moving bookshelves into this room so that I can finally unpack all of my books (and there are a lot of them).  This is a good project to work on over the winter whenever the weather is unpleasant, so I am in no hurry to get it done.  Life just continues to be one unpacking project after another, but when my husband arrives we will definitely take time to get into town and enjoy some holiday festivities.  I hope everyone out there is making time to do the same!

On the Homefront: I Finally Have Internet!


Good morning from chilly but lovely New Mexico!  We had a gorgeous sunrise today so I decided that I would ease back in to blogging by posting a couple of images.  It has certainly been quite a while since my last post!  My only excuse is that I have been so busy settling in to our New Mexico house that I have not had time to set up an account for internet access until now.  This will just be a short post because I am still quite busy here, but I promise to work on getting back into blogging (both my own site and the ones that I normally follow) as quickly as possible.  There may also be a few aesthetic changes made to this site in the near future as I transition from blogging about life in Georgia to describing our new location in New Mexico.  I hope you all had a wonderful Thanksgiving and are now fully in the mood for the holiday season!

On the Homefront: The Trip to Santa Fe

I am one day away from arriving in Santa Fe to start moving in to our new home.  I am not sure when I will have access to WiFi again after I check out of my hotel room tomorrow morning, so I thought I would give a quick summary of my travels so far.  No pictures, unfortunately, but just a few observations about driving cross-country with two dogs and a car packed to the gills with stuff.

First of all, this has to be the hottest drive I have ever done, and I used to do a lot of long-distance driving when I was younger.  I decided to take this journey in October because I thought the weather would be cooler, but I have to say it is hotter right now than it was in August in Georgia!  I took Interstate-20 from Georgia to Texas, and it was scorching the whole way, with afternoons over 100 degrees for the first two days.  I finally got off of I-20 to head north today, and the weather is considerably cooler in Amarillo, which is where I am right now.  Luckily I packed a warm coat because I will need it tomorrow morning!

Second, I have to say I am so impressed by our two dogs, who have never gone on a long car trip before.  I did get a tranquilizer for Madison, who hates riding in the car and has gotten carsick before, but I have been steadily decreasing the dose she gets and will not be giving her any for tomorrow's much shorter trip because she is doing very well.  She does not have much of an appetite but eats enough to get by, so she should be okay.  I am giving our almost 13-year-old Ruby a bit of pain medication every day so that she does not feel too arthritic after riding in the car all day, and she is doing fine as well.  I worried about them the first two days because it was so hot, but a night of relaxing in a hotel room helped them recover sufficiently to continue with our trip the next day.  They will get plenty of TLC once we arrive in Santa Fe, and I promised them that they will never have to do another cross-country trip again!

Now for a few details of this challenging trip.  I left our Georgia house two hours later than planned because I had a very hard time fitting all of the stuff I needed for myself and the dogs into the car.  I did finally figure it out, but by the time I left it was very late in the morning.  In addition to the heat, there was the usual slowdown in Atlanta, thanks to a minor accident and some road construction.  Once past Atlanta the drive was not bad until we reached Birmingham, Alabama, and that was when the worst part of the trip so far occurred.

For some reason the powers that be in Birmingham decided it was a good idea to completely close down I-20.  There was an alternate route that I could have taken, but the detour signs were put up too close to the exit ramp, so by the time I figured out I should have taken this route I had already passed it.  When I reached Birmingham, there was an alternate route set up through the city, but it was so circuitous that I got lost the first time I attempted to take it.  I ended up calling 911 because I was so lost I had no idea where I was, and they were at least able to direct me back to I-20 so I could start all over again.  My second attempt taking the detour was successful, but it took me over an hour to get out of Birmingham.  Of course this was during the hottest part of the day, with temperatures staying at or over 100 degrees the whole time.  Thank goodness my dogs were medicated, because I was so upset that I am afraid my dogs would have been a nervous wreck otherwise!

We finally made it to our hotel in Mississippi well after dark, after driving for much longer than I had planned.  Luckily the hotel was very nice and we all got some much needed rest and relaxation.  I actually enjoyed driving through Mississippi.  I even saw a billboard to the World's Only Cactus Plantation, but apparently it is now closed.  Driving through Louisiana was not bad either - the most intriguing thing I saw there was a sign along the interstate for a 13-mile Bear Crossing!  The most challenging part of yesterday's leg of my trip was driving through Dallas-Fort Worth traffic during the hottest time of day, once again at or above 100 degrees.  Fortunately our hotel was just west of Fort Worth, and the drive was not as long as the first day.  While the hotel had an inconvenient policy of only allowing dogs on the upper floors, my two girls took to the elevator rides like champs, so all was well.

Today's trip was the easiest so far, as it was much cooler and a little shorter.  We drove through a part of Texas that seems to be devoted to wind power - there are more more wind turbines there than I have ever seen in my entire life.  Luckily there are endless acres of cotton fields in which to put all of those turbines!  Even here in Amarillo the wind seems to blow constantly, so they must be generating a lot of power.

Tomorrow we should arrive at our Santa Fe house in plenty of time to get settled in for the night.  My horse is tentatively scheduled to arrive very late the next day, so I will have to scramble to get the barn set up for his arrival.  My furniture may also arrive on the same day, which would be a disaster, so I am hoping that it will arrive a day or two later as originally scheduled.  It may be a while before I get back to my blog, but I will return when I can.  I hope everyone is finally enjoying fall weather by now!

Weekend Wardrobe: Denim, Rust, Pink, and Ivory Autumn Travel Wardrobe

Since I am traveling with two dogs who have never been on a long car trip before, my travel wardrobe will unfortunately not be as attractive as this one.  One dog is a senior and the other has never enjoyed riding in cars, so I will be wearing utilitarian clothes such as old jeans and well-worn t-shirts just in case some major cleanups are required while en route to our destination (my back seat will be similarly attired in easy-clean coverups as well!).  While this is not exactly the exciting and glamorous road trip I dream of making some day, it will certainly be an adventure!  If you don't hear from me before the end of the month, then I will hopefully be back on my blog some time in October.  See you then!

Foodie Fridays: Fast and Easy Pesto Lasagne


Because I am so busy getting ready to move at the end of the month, I have been relying on a lot of convenience foods when preparing meals.  I am also trying to use up as much food as possible in the freezer before I leave.  I had a couple of packages of frozen lasagne noodles that I have been meaning to try, so the recipe I found for Fast-and-Easy Pesto Lasagne was especially appealing.

Of course I did not make homemade pesto (I am a lazy cook, after all, in addition to having so little time for cooking right now!) - I used the refrigerated version from the supermarket instead.  I substituted chicken stock for the water, but only because I have some left over from another recipe that must get used up.  I also used pre-shredded cheese instead of cubing a chunk of mozzarella because it was easier.  Feel free to ignore all of my lazy changes and stick to the original recipe if you prefer!

This dish is very rich but extremely tasty, so try not to eat more than one serving per meal!  Serve the lasagne with a green vegetable or a salad for a complete and satisfying dinner.  The only change I might make next time is to soften the lasagne sheets in some boiling water before using them, as they were rather chewy, but even without this change the recipe is one I will certainly be using again.

Fast and Easy Pesto Lasagne

1 carton (15 oz.) ricotta cheese (I always use the low-fat version)
1 egg
salt and pepper to taste
1/3 C. water (or chicken stock)
1 pkg. (8.8 oz.) Giovanni Rana Ready to Bake Lasagne Sheets
1 1/2 containers (7 oz. each) refrigerated pesto sauce
1 1/2 C. shredded Italian cheese blend

In a medium bowl, whisk together the ricotta, egg, salt and pepper, and water.  The mixture will be runny but the extra moisture will help soften the lasagne sheets so don't be alarmed!

Spread 1/4 C. of the ricotta mixute on the bottom of a lightly greased 9-inch square baking dish.  Top with 2 lasagne sheets, overlapping them.  Spread 1/3 of the pesto (half of one container) over the noodles, then 1/3 of the remaining ricotta mixture.  Top with about 1/3 C. of shredded cheese.  Arrange 2 more lasagne sheets on top, and repeat the pesto/ricotta mixture/shredded cheese layers.  Finish with the last 2 lasagne sheets, followed by the remaining pesto, ricotta mixture, and shredded cheese.  Cover the baking dish with foil, preferably nonstick (otherwise try to keep the foil from touching the top of the lasagne).

Bake at 425 degrees for 35 minutes.  Remove the foil and bake for an additional 5-10 minutes to brown the top slightly.

Remove the lasagne from the oven and let it rest for at least 5 minutes before slicing.  Serves 6.

On the Homefront: Getting Ready for the Big Move

Just thought I would post a quick update on my big move coming up at the end of the month.  My husband and I are doing this move in stages.  The first stage involves me taking pretty much all of my books, movies, and clothes, most of our kitchen items except for the bare essentials I think my husband will need, all of our dogs' and my horse's things, and the minimum amount of furniture that I will require to live comfortably in our New Mexico house.

At the moment I am trying very hard to go through all of my belongings and ruthlessly downsize.  My husband is in charge of removing everything that I discard as quickly as possible before I have a chance to change my mind about anything (I load my discarded items into his car as soon as I can since I am less likely to haul things back in once they are out of the house).  This is the last move we intend to make, and I really want to minimize the amount of stuff that I own.

The items I decided to pack myself are my books and movies, plus some of my clothes.  I got all of my cookbooks packed up when we had to replace our kitchen and dining room tile floors so I am over halfway done, but I really need to pick up the pace and finish so that I can move on to other things.  I am afraid this means that I will be neglecting my blog for the rest of the month, so posts will be few and far between.

Hopefully by the middle of October (or whenever I can get internet service to our new house) I will be back on a more regular schedule.  Since I will be going back and forth between New Mexico and Georgia at least a few more times once I find a reliable pet sitter, my blog will keep its "GAFunkyFarmhouse" title for now.  Despite the stress of packing for a move, I am looking forward to our retirement life in New Mexico, and can't wait to experience autumn in Santa Fe!

Foodie Fridays: Pulled Chicken Barbecue Naan Bread Pizza


I have been making naan bread pizzas on a regular basis, and have had this idea for a barbecue chicken version in the back of my mind for a while.  I finally had the time and the ingredients to actually test out my idea, and I am delighted with the results!

Because I am so busy preparing for my move at the end of September, I used a lot of convenience foods to keep the process simple, but at some point I will make my own version of shredded chicken for this recipe.  I am allergic to red meat, but if you have pulled pork or beef then by all means substitute one or the other for the chicken if you like!

I wanted to use a barbecue sauce that was not overly sweet, which is hard to find, so I added the peanut sauce to try to tone down the sugary flavor.  Feel free to use your own favorite barbecue sauce.  Smoked mozzarella is one of my favorites cheeses and is fantastic on this pizza, but I think any smoked cheese would probably work.

This quick and easy meal combines the flavors of pizza and barbecue, which should please just about anyone you need to feed (and if not, then that just means there is more for you!).

Pulled Chicken Barbecue Naan Bread Pizza

1 container (12 oz.) Curly's Sauceless Roasted & Seasoned Pulled Chicken
1/3 C. plus 4 T. Jim Beam Southern Tang Barbecue Sauce
2 tsp. House of Tsang Bangkok Padang Peanut Sauce
2 T. olive oil
2 bell peppers (any color), sliced
1 medium red onion, sliced
1 2-pack (8.8 oz.) Stonefire Naan (I used whole grain)
8 oz. smoked mozzarella, cut into slices

Heat the chicken according to package directions.  Combine the 1/3 C. barbecue sauce with the peanut sauce and stir into the chicken until well combined.  Set aside.

Heat the olive oil in a large skillet over medium-high heat.  Add the sliced peppers and onions and cook until they begin to soften.  Lower the heat to medium and cook until the onion is translucent and the vegetables are soft.

Place the naan breads on a foil-lined baking sheet.  Spread each naan with a thin layer of barbecue sauce, about 2 T. on each one.  Divide the chicken mixture evenly between the two breads.  Divide the vegetable mixture evenly between the two breads.  Top each naan with the smoked mozzarella, spacing the slices as evenly as possible.

Bake at 350 degrees for about 8-10 minutes, until each pizza is heated through and the mozzarella has melted.  Remove from the oven and cool slightly before cutting each pizza in half.  Serves 4.

Foodie Fridays: Sheet Pan Pesto Gnocchi


If you are looking for a quick and easy dinner idea, then give this recipe for Sheet Pan Pesto Gnocchi from the Two Peas & Their Pod website a try.  Everything is cooked on one sheet pan which is lined with foil for easy cleanup, and the end result is a tasty and satisfying meal that requires very little effort to prepare.  If you line you sheet pan well with the foil, you may not even have to wash the pan - what could be easier?

Sheet Pan Pesto Gnocchi

1 package (16 oz.) potato gnocchi
1 pint (2 C.) grape tomatoes
1 zucchini, cut into chunks
2 bell peppers (any color), cut into chunks
1 small red onion, cut into chunks
1/2 C. plus 2 T. basil pesto
1/4 C. shaved or shredded Parmesan cheese
Fresh basil leaves, shredded

Spread the gnocchi and vegetables on a baking sheet that has been lined with foil and sprayed with cooking spray.  Pour 1/2 C. of the pesto over and toss until everything is well coated.  Spread the gnocchi and vegetables in an even layer on the pan.

Bake at 425 degrees for 20-25 minutes, tossing once halfway through cooking time.  The tomatoes should be soft and about ready to burst and the gnocchi should be soft and slightly crisp.

Remove the pan from the oven and divide the gnocchi and vegetables among four plates or bowls.  Drizzle each serving with the remaining 2 T. pesto.  Garnish with the Parmesan cheese and shredded basil leaves.  Serve immediately.  Serves 4.

Note: I added dollops of ricotta cheese as a topping as well.

Wish List Wednesdays: AWE Glow in the Dark Skeleton Yard Stake


Even though it is only August, Halloween decorations have already been showing up for weeks now. As Halloween is one of my favorite holidays I really don't mind, although even I think this is way too early!  Be that as it may, I have my eye on the Glow in the Dark Skeleton Yard Stake ($59) from At West End as holiday décor I may just purchase for our yard in New Mexico.  At almost 3 feet tall, this smiling skeleton is certain to make an impression, and I like the fact that he is not too spooky-looking.  Made of metal, this yard stake is much less likely to blow away than anything plastic (our house is in a rather windy area), and as an added bonus it even glows in the dark.  Have you started thinking about the upcoming holiday season yet (I've even seen Christmas décor for sale in a couple of catalogs!)?

This 'n That Thursdays: New Food and Beverage Products I Am Loving Right Now

Every summer I seem to find new food and beverage products to try that are both tasty and relatively healthy.  Below is a list of the ones I discovered this year, and which are now regular inclusions in my weekly shopping cart:

1) La Croix Cerise Limon Sparkling Water

I am obsessed with all the no-calorie flavored seltzer waters available right now, even though I am one of those people whose throats are irritated by carbonated beverages.  I will try any and every flavor (except blackberry cucumber, because EEEWWW!), but my favorite at the moment is La Croix Cerise Limon (Cherry Lime) Sparkling Water.  Seltzer water is so refreshing on a hot day, and the slight hint of flavor added to these zero-calorie, zero-sodium, zero-carbohydrate beverages adds just enough interest to keep me buying more!

2) Chobani Nut Butter Yogurts

As someone who must stay on a low-carbohydrate diet, I end up eating a lot of nut-based foods.  Fortunately, I love nuts!  Recently Chobani introduced a line of nut butter yogurts which are relatively low in carbohydrates, cholesterol, and sodium.  They are also quite tasty, and a healthier alternative to sugary fruit-flavored yogurts.  They have now become a regular addition to my diet, either plain or with an added handful of blueberries.

3) Chobani Madagascar Vanilla & Cinnamon Less Sugar Greek Yogurt

I like to buy vanilla yogurt in the 24-ounce size rather than as individual servings, and the best that I have found in terms of flavor as well as nutrition is Chobani Madagascar & Cinnamon Less Sugar Greek Yogurt.  It is so good you cannot even tell that it is low in sugar, and this flavor is the absolute best served my favorite way with a handful of blueberries.  It is so popular that our local Publix has trouble keeping it in stock, so do give it a try if you can find it in your own supermarket!

4) Almond Breeze Unsweetened Original Almondmilk Creamer

My cholesterol has recently started to creep up as I get older, so I am always looking for ways to reduce my consumption of products with too much saturated fat.  I love to drink my morning tea with half 'n half, but recently discovered Almond Breeze Unsweetened Original Almondmilk Creamer, which is just as delicious in tea but has no saturated fat.  At just 10 calories and one gram of fat per tablespoon, I can enjoy this creamer every morning without worrying about adding saturated fat to my diet.

5) Califia Farms Unsweetened Creamer

Another excellent alternative to half 'n half is Califia Farms Unsweetened Creamer, but only if you like the flavor of coconut.  This nondairy, low-sugar creamer has just a smidgen of saturated fat, but its rich and creamy flavor is just as satisfying as real half 'n half.  Save this creamer for unflavored hot beverages, as the coconut taste will overwhelm any added flavorings.

6) Pure Blends Avocado Oil Plant-Based Butter

I love butter, despite all of its saturated fat.  I usually stick to a butter and canola oil blend as a bread spread, but lately have decided that, with my cholesterol level beginning to rise, I need to eliminate even this source of saturated fat from my life so that I can still eat cheese, which is one food that I would have a very hard time giving up.  This year I discovered Pure Blends Avocado Oil Plant-Based Butter and decided to give it a try.  While butter substitutes will never be as satisfying as the real thing, this spread is not bad, although it does include a couple of ingredients (palm and palm kernel oils, monoglycerides) that are not nutritionally ideal.  I am just starting to explore the world of butter substitute spreads, so I may find one I like more, but for now I am switching to this avocado-oil spread.

Wish List Wednesdays: Crate and Barrel Bruna 45" Centerpiece Table Runner


As I get ready for our move to New Mexico, I like to keep track of home décor items that fit the theme of a rustic modern southwestern style, which is the look I would like to emphasize in our new home.  The Bruna 45" Centerpiece Table Runner ($99.95) from Crate and Barrel is a good example of the sort of home accessory I am looking for.  The handwoven geometric patterns, natural palm leaf fiber, and even the natural color enhanced with shades of red in the design, all suit the style perfectly.  The price is a bit more than I really want to pay for a table runner, but I will keep tabs on this table runner and if it should happen to go on sale I will be one of the first in line to place my order!

Weekend Wardrobe: Summer Weekend Travel Wardrobe Based on Outfits that Caught My Eye at Albuquerque's Sunport International Airport

One of my favorite pastimes at the Sunport International Airport in Albuquerque while I am waiting for my return flight back to Georgia is to keep an eye out for the most interesting travel outfits.  On my most recent trip I was at the airport several hours before my flight, so I had plenty of time to look for my favorites, but I almost missed the one that really caught my eye because the woman wearing it did not show up until I was standing in line to board my own flight.  Of course what really got my attention was the dress she was wearing (similar to the one shown above) because it had a Dalmatian print pattern and I am a dedicated Dalmatian lover.  The wearer also added a unique crossbody bag in color blocks of olive, red, and turquoise, plus turquoise and tan sandals.  The combination was so striking, and the outfit looked so cool and comfortable, that I decided to use this woman's outfit as the inspiration for a summer weekend travel wardrobe.

The apparel to be packed were selected based on two other outfits that I noticed at the airport.  One outfit was a combination of a black and white geometric print tunic top plus white ankle pants, while the other included a striking black and white southwestern print cardigan, white top, and black pants.  My addition of an extra top, a few more accessories, and more Dalmatian print on a summery short pajama set rounds out the items packed for a quick weekend getaway:

While most of the items are in basic black and white, the addition of turquoise as an accent color plus the colorful color-blocked handbag keep this wardrobe from looking boring.  While I rarely wear black in the summer (it makes me feel too hot), even I would be tempted to travel with this selection of clothing!

I will be leaving for another trip this week, to Pittsburgh for a special reunion, so once again my posts will be sparse and sporadic for a while.  I still have an accessories post to finish for a previous wardrobe, which I will try to do when I return, but my big move to New Mexico is coming up fast so I am not sure when I will be able to get back to a regular posting schedule.  I will check in periodically, however, and once I am settled in to our New Mexico home I should be able to post more predictably.  I hope you are all having a great summer!
